ORGANIC RED IGT BOTTICELLO
The grapes are hand-picked into crates after the vineyard has been pruned to remove the least suitable grapes. They are brought to the cellar within 1-2 hours, destemmed, and approximately 70% of the berries are gently crushed.
Vinification is traditional, with pumping over and punching down for 10-12 days at a controlled temperature. The wine is then racked and racked into 15-20 hl barrels for approximately 15 months.
Intense ruby color, a clean aroma with notes of red berry fruit and subtle nuances of vanilla, licorice, and spices. The flavor is savory, well-structured, balanced, and warm, with hints of wild berry jam, and a good persistence on the palate.
