VIN SANTO SAN GIMIGNANO DOC
The grapes, Trebbiano Toscano, Malvasia del Chianti and Vernaccia, harvested in early October when overripe, are hung in cordons to dry in specially equipped, well-ventilated rooms.
In January, when the drying bunches have reached around 18/20° beàume, we move on to vinification with soft pressing in a traditional press with a yield of 35% must and a final 26%.
After the fermentation process begins, the must is placed in 1000 liter barrels on the mother (and native yeasts) of the previous Vin Santo, filled to 3/4 full. It remains in the sealed barrels for 3 years, undergoing successive arrests and fermentation starts that occur naturally with the changing seasons, favoring slight oxidation.
Antique golden yellow in color with amber highlights, a typical, ethereal, intense, and persistent aroma reminiscent of Madeira and cherry wines. The taste is warm, sweet, harmonious, rounded, and full of consistent, very pleasant flavor.
Serve at a temperature of 18°C.
